Haven’t made any sweet treats in ages as we’ve been trying to eat healthier at home, but yesterday I caved and made a batch of cookies. They’re mostly oatmeal so I’ll just ignore the butter and sugar and pretend they’re good for me! They came out nice and crispy, like a cross between a flapjack and a muesli bar. Mmm…I think I’ll go have another now.

Lemon Oatmeal Cookies
makes 24

225g rolled oats
200g caster sugar
55g brown sugar
125g plain flour
200g butter
1 large egg
zest of 2 lemons
1 tsp vanilla extract
2-3 drops lemon extract
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Preheat the oven to 180°C.

Place the butter (brought to room temperature), caster sugar, brown sugar and lemon zest in a large bowl. Using a wooden spoon (or a hand mixer, on medium setting) cream the butter into the sugars. Once the mixture becomes a smooth thick paste add the egg, vanilla and lemon extracts.

Sift all remaining ingredients (except the oatmeal) into a separate bowl. Incorporate the dry mixture gradually into the batter, making sure each addition is mixed in before adding more. When well combined, slowly add in the oats, half a cup at a time.

Make balls of cookie dough (about the size of a golf ball) and place on a parchment-lined baking sheet, spacing them far apart (the dough will spread while baking). Press the balls down slightly before popping into the oven.

Bake for 15 minutes until golden and crispy. Remove from the oven and leave to cool. Repeat with remaining cookie dough.
