tequila!

mango margarita

M is in town from Singapore this week and she’s been craving seafood so we popped over to Bibendum for a glorious platter of fruits de mer, washed down with a crisp bottle of Sancerre. We had originally planned a bit of shopping post lunch but the beautiful weather made us opt for cocktails on the terrace instead! We stopped on the way back to the flat at the grocers in Holland Park for some mangoes and the off-license for some golden José Cuervo. The resulting Mango Margaritas were fantastic and made for a lovely boozy afternoon.

Mango Margaritas
(makes a pitcher – enough for 6 glasses)

150ml José Cuervo Especial
3 ripe mangoes, peeled and cut into pieces
juice of 4 limes
ice (approximately 2 cups)
salt

Rub some lime juice on the rim of your serving glasses (I used martini glasses) and dip in salt. Place the tequila, mango pulp, lime juice and ice in a blender and blitz till smooth. Pour into glasses and enjoy! Mmmmmm.
